Halibut with Mango Salsa & Cilantro Lime sauce

Cilantro Lime Sauce 
Ingredients: 

1/2 cup Vegenaise 

1/2 cup unsweetened almond milk

1 tbsp extra virgin olive oil

1 tbsp chopped garlic 

juice from 1/2 lime 

2 tbsp chopped cilantro 

chili powder 

onion powder

cumin powder

garlic powder 

dried parsley 

1-2 tbsp of water

Halibut Fillet 
Ingredients: 

Wild-caught halibut fillet

2 tbsp Miyoko’s vegan cashew butter

Fresh thyme

1 clove garlic

Directions: 
  1. Set heat to medium, add 2 tbsp olive oil 

  2. Season with pink Himalayan salt & pepper (seconds before you place on pan)

  3. Cook for 2-3 minutes on medium heat 

  4. Before flipping add 1-2 tbsp vegan butter (I used Miyoko’s cashew butter), thyme 

  5. Baste the fillet with the melted butter to keep it moist, this will also help cook evenly 

Directions: 
  1. Add all ingredients to blender, blend and set aside

       *Keeps up to 2-3 days in refrigerator*

Sliced Ripe Mango

Mango Salsa
Ingredients: 

1 cup mango 

3 roma tomatoes

1/2 bell pepper

1/2 cup red onion

1 tbsp cilantro 

juice from 1/2 lime 

1 tbsp olive oil

salt & pepper 

Directions:

Garlic
  1. Dice all ingredients, add lime juice, olive oil, salt & pepper.

 

  1. Set in refrigerator for 10 minutes to let flavors absorb into each other.

Turmeric Cauliflower "Rice" 
Ingredients: 

2 tbsp olive oil 

1 head of cauliflower or store bought  cauliflower pearls

1 tbsp garlic powder 

1 tbsp nutritional yeast

1 tbsp turmeric

1 tbsp dried parsley

1 tbsp paprika

1 tbsp ground mustard powder 

1-2 tbsp chopped garlic (I used 2)

salt & pepper 

coconut aminos  

Directions: 
  1. Add olive oil to frying pan 

  2. Add cauliflower & spices

  3. Add coconut aminos & mix

  4. Let cook for 8-10 minutes 

Place turmeric cauliflower rice on plate, lay your fillet on top, with 4-6 pieces of asparagus, top with mango salsa & cilantro lime sauce. Enjoy!
